While I was on vacation, I did decent on maintaining a healthy lifestyle. I did chose way more healthy options than my unhealthy options, but there was definitely more than one case of indulgence (we made brownies...twice) So, I decided to do a cleanse when I got back. I had seen this cleanse on and decided to do it before the beach. Ha! However, I am doing it now. I actually bought the book because it deals with more than just diet and seemed really interesting. I was surprised at how information is in it! Definitely a good purchase. Well, in the book it said to do the cleanse on a weekend to reset your body for the following 6 weeks (IT HAS EATING PLANS FOR 6 WEEKS). I'm not following the meal plan because it does involve things like, well, steak. But, I did really like the idea of resetting my body on the weekend for the week, so that's what I opted to do. I didn't count calories for this, but I'm sure its definitely not over my calorie count. I stuck with the cleanse with the exception of two shots of espresso. I'm a caffeine addict (I work at coffee shop, no judging!) so I knew that I would have a serious headache with no coffee, but I didn't add milk or stevia or anything 🙂
LBN Breakfast Smoothie
1 cup non-fat milk (I used unsweetened, unflavored almond milk)
1 cup berries (I used blueberries)
1 tsp peanut butter or flax seed oil (PB for me, I always have some on hand)
1 cup ice
`1. Blend until frothy.
1 cup cucumbers, sliced then cut in half
1/4 cup white wine vinegar
1 tbsp dill
1. Let marinade in the fridge for about an hour.
Balsamic Vinegarette Spinach Salad with Chickpeas
1/2 cup cooked chickpeas (I cook dry beans)
Raw Spinach (as much as you want)
2 tsp Extra Virgin Olive Oil
2 tsp Balsamic Vinegar
1/2 tsp Italian Seasoning
1. In a small bowl, mix the balsamic vinegar, italian seasoning and olive oil.
2. Add the chickpeas.
3. Let marinade for about 30 minutes.
This dessert is super easy, healthy and delicious. I wanted something for dessert but wanted something new to try. I used 1/2 container of Vanilla flavored greek yogurt, 1 tablespoon mini dark chocolate chips and one large strawberry sliced. Yum! This delicious dessert was 131.
