Black Bean Avocado Wrap & Mexican Quinoa/Brown Rice

Okay, so first of all I apologize for my last of posting. I’ve been so busy lately that everything has been grab and go, in fact, if you follow me on IG (eisforelizabethhh) you’ve seen my complaints about not eating off real plates and just out of my reusable gladware. Well, today I was able to actually eat at home but it was a quick and easy meal. The wrap itself is 268 calories and the rice/quinoa mixture is 214. The entire meal is 482 calories and full of complete proteins.

Black Bean Wrap

1 Whole Wheat Tortilla (I used Chichi’s)

1/2 cup romaine lettuce

1/4 cup cooked black beans

2 tablespoons avocado

1 tablespoon lemon juice

1 tablespoon minced cilantro

1. Lay out the tortilla.

2. Add romaine lettuce and black beans.

3. Spread out avocado and sprinkle with lime juice.

4. Add cilantro and roll.

Mexican Brown Rice & Quinoa

1 cup cooked brown rice

1/4 cup cooked quinoa

1 teaspoon taco seasoning

1. In a bowl, combine all ingredients.
